We are almost done with our 31 Days of Halloween celebration... I, for one, am exhausted. Luckily, today's installment is for delicious Pumpkin Bars, which will help me regain my strength. At least, that's my excuse for eating half the pan. Ahem.
This is my mother's recipe and couldn't be any easier! Combine the following ingredients into a bowl and mix well:
4 eggs
1 cup oil
1 cup flour
1 tsp baking soda
2 tsp baking powder
1 2/3 cup sugar
1 cup pumpkin
1 tsp salt
Did I mention 'mix well'? Mix well.It doesn't look appetizing right now, but trust me, you're on the right path.
Pour it into a deep cookie sheet.
Bake at 350 degrees for 20 to 25 minutes.
Now we're getting somewhere.
When they're cooled, mix the following with a mixer. Don't try to mix it by hand, it will just turn out lumpy... get your hand mixer out from that bottom cabinet and give it a whirl.
3 oz cream cheese
2 cups sifted powdered sugar
1 stick butter, melted
Did I say 'mix well'? Mix well. Deja vu.Sweet fancy Moses, does that look good.
Pour it onto the cooled bars and spread it around. Try not to eat too much of it before this step.
Once that is done, quickly cut out a piece to take a picture before your family devours it and leaves you with no final product to show your readers. That could just be my experience.
It's good. It will last about 20 minutes on your table. On your hips, it will last a bit longer. Sigh.

Hold up... for the icing part, do you mean 2 cups of powdered sugar? I'm assuming so from the looks of the picture. :) These look fabulous!

No problem! One more question though - if you actually measure out a cup of pumpkin for these, what do you do with the remaining pumpkin, since the can has more than just a cup?

ReplyDelete@Anonymous, I have asked myself that question for years. There is another cup of pumpkin in the small can after you make one batch... I would say that we should just make two pans, but I only have one cookie sheet with deep sides. There has to be a recipe for pumpkin cookies or something that could use the rest of it, I'll get to looking!

DeleteThanks for a great recipe. Do you grease the sheet pan (cookie sheet with sides)? Also, if I do not use an entire can of pumpkin, I put it in a sealed plastic container in the refrigerator for another pumpkin recipe like bread, pie or other cookies. It keeps a week or so then will get moldy if not used. Heck you can always make some pumpkin bread & freeze it provided you have room in your freezer.
