24 Days of Thanksgiving - Breakfast Casserole

Most of my family lives pretty close, which is both a blessing and a curse. I do have one Aunt, Patsy (who I'm sure is reading this... Hi Patsy!) who lives a few hours away but even though I'm her favorite niece ever, I don't see her often enough. I'm assuming that a few of you have out-of-town family that you host for the holidays... and this casserole is perfect for breakfast for your hungry relatives!

Gather the following ingredients:
1 pound of bacon, diced, or sausage
1 medium white onion, diced
6 eggs, beaten
4 cups of frozen hash browns, thawed
3 1/4 cups cheddar cheese. You heard me.
1 1/2 cups small curd cottage cheese
Brown the sausage or bacon with the onion until the sausage is browned (or bacon is crisp) and the onions are transparent.
 In a bowl, combine the remaining ingredients.  Stir in the meat and onion mixture.
Pour the whole mess into a greased 9"x13" baking dish.  Bake, uncovered, at 350 degrees for 35-40 minutes.
It is napalm-hot right now.  Let it cool for a few minutes.  The roof of your mouth will thank you.
It got eaten before I could take a picture of it.  You gotta move fast in this house.

You can use other cheeses in the place of cheddar, it's just our favorite.  This is perfect (and easy!) for a family breakfast!

  5. Now this is something I could fix, Priscilla. I love breakfast casseroles. Since there are only two of us, it would then become a lunch and supper casserole as well. Yummy goodness all day long.

  7. Looks delicious! I got your idea as a base for my casserole. I added all colors of peppers, onions, cherry tomatoes and broccoli! I hope it turns out as good as yours!
