24 Days of Thanksgiving - Mashed Potatoes

Yes, I'm doing a post on mashed potatoes. You ask why? I have several reasons:

1. They are served at every Thanksgiving dinner. Really. Have you been to a Thanksgiving dinner that didn't serve them?
2. I think people over-think how to make them. Everyone thinks there's an amazing trick, but there's not. It's simple if you don't try to complicate it.
3. Potatoes are amazing. They are just great. Mash them and float away to carb heaven on pillowy puffs of mashed potatoes.

Start with potatoes. I use russet because I think they're pretty.
Scrub the potatoes, peel them and cut them into slices or chunks.

Put them in a pot of cold water.  Yes, it needs to be cold. Cook it on high, covered.
Check it after 20 minutes or so, turning it off when the potatoes are cooked enough to fall apart.  Drain the potatoes and move them back into the hot pot. You only need 3 ingredients to make them yummy.
Add the butter...
The picture is steamy.  Those are some hot potatoes.  Mash them up with the butter.
Once you've got the butter melted and the potatoes mashed well, add the cream.

Stir the cream into the potatoes.  Add some salt, mix them some more... try not to overmix them though, because they'll get glue-y.

That's it.  You could roast a head of garlic and throw that in for extra awesomeness but these will stand on their own.  Mmmmm... carbs.

  2. Thanks for the refresher, I don't cook and it's my job this year to make the mashed potatoes. We have always had them whipped rather than just mashed. Mom always used the Kitchen Aid mixer, I better stick with that, can't break tradition you know. But I probably would have forgotten that I needed COLD water.
