Crockpot Chicken and Noodles

Last week, I gave you my tried-and-true recipe for homemade noodles.  They are yummy.  And really, not as much work as you'd think.  And in this recipe, they are amazing.

Crockpot Chicken and Noodles
1 large chicken breast
1 can (the small size) cream of chicken soup
About half of a medium-sized white onion, chopped
A clove or two of garlic, chopped
2 small cans of chicken broth
Kosher salt

This recipe is simple.  Almost too simple to type up for you, but I never know when to shut up.  Put your chicken breast in the crockpot.  It doesn't need to be thawed, but if it is I'm sure life will go on.
Pour the cream of chicken soup on top of the chicken breast.
Throw your chopped onion on top...
And throw the chopped garlic on top of that...
And pour ONE CAN of the chicken broth on top.  Feel free to add a pinch of kosher salt or pepper or whatever seasonings you and your family love in chicken and noodles.  Cook it on low for about 5 hours.  I've let it go six hours and there was no trouble, but my crockpot can be fussy.  If your crockpot will boil things even on low, five hours is plenty.

Take the top off the crockpot and use a fork to shred the chicken.  By this time, it should basically fall apart... (insert drool here).  Then, throw in your noodles.
Stir them in to combine them and then add the last can of chicken broth over the top.
Oh, and this will smell amazing.  Really.  Like, your neighbor might be in their kitchen and say, 'what's that amazing smell, did someone put something in the oven?'  You might be able to hear their disappointment if you listen closely.

Give it another stir, just for good measure, and put the top back on.  Let it cook for another two hours or until your noodles are just the right texture.  Two hours on low just about does it for us.  The noodles will plump up during cooking and will absorb most of the liquid, but there will be enough to use a piece of bread as a utensil to soak it up and then shove in your mouth.
It's so easy... and yummy... and it smells good.  I don't have a calorie count on this, but I'm sure it's nothing but vitamins and minerals.  Enjoy!

  5. This was a wonderful recipe...I just finished making it and sitting down to eat. I added fresh carrots, celery and I used spaghetti noodles (which is what I had on hand). It is so Delicious and I will be making this again in the future.
